Coffee Cake Recipe

In Karachi, coffee cake means cake with coffee-flavored icing. But where I come from, coffee cake is more like a bread with cinnamon and butter that is served with coffee. That’s what I’m talking about here! This recipe was inspired by my friend Lisa’s Breakfast Cake recipe.

Amarah’s Coffee Cake

  • 2 c. flour
  • 3/4 c. sugar (brown /or white)
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 c. butter (50 g.)
  • 1 c. milk
  • 2 eggs, lightly beaten

Mix flour, sugar, baking powder and salt together, then cut in butter. Add milk and eggs, stir well. Then make the topping in a separate bowl.

  • 1/2 c. flour
  • 1/2 c. brown sugar
  • 1 tsp. cinnamon
  • 1/2 c. butter (100 g.)
  • 1/2 c. walnuts

Mix flour, sugar and cinnamon together then cut in butter. Add walnuts.

This is layered in a buttered loaf pan: half of batter, half of topping, remaining batter and remaining topping. Bake at 350 degrees for about 1 hour. Check with a toothpick. Serve in slices.
