Hot Cocoa

When it begins to get cold outside, there is nothing like hot cocoa to make you feel warm and cozy.

3 Tblsp. unsweetened cocoa
3 Tblsp. granulated sugar (Demerara if possible)
3 Tblsp. milk

Whisk together in a pan over low heat, simmering gently til sugar melts*. Then add:

1 Cup milk and warm through. Pour through a tea strainer into 2 small mugs.

Alternatively, strain into a jar and chill for homemade chocolate milk (which is apparently great for your body after a workout!).

*For delicious chocolate syrup for waffles or ice cream, stop here, pour into a small cream pot and serve warm.
