Chicken Breast Burgers

Since we all want fast and fun food, but are concerned about health – here’s a recipe that fills the bill. Great for busy people, just mix up this marinade with some chicken breasts and leave in the fridge for up to 24 hours. Then pan fry and serve as burgers, or on a bed of salad vegetables.

Feel free to experiment,  customize the marinade with your own favorite herbs and spices. Serve with healthy oven fries (that recipe will be posted soon).

1 pound chicken breasts, sliced to 1/2-inch thicknesses
2 cloves garlic, crushed and grated
1 – 2 Tblsp. lime or lemon juice
3 Tbsp. extra virgin olive oil
Salt and black pepper to taste
1/8 to 1/4 tsp. Cayenne pepper (to taste)
1/4 tsp. paprika

Mix all together with a fork while pricking chicken to get marinade to soak in. Cover and put in the refrigerator for several, up to 24, hours. Pan fry in a non-stick pan on med-high heat. Frying in batches, brown one side well and then the other, this keeps it moist. Cut ito the center with a clean knife to check that it’s cooked through.
