Fruit is very seasonal here, you can’t get everything year round; so it’s exciting when something new comes into full season. This week it’s apples. This recipe is an adaptation of a Bon Appetite recipe. Today, I substituted oil for the butter due to cholesterol considerations, but let me say this: there is nothing like butter! If you do the same, add a pinch of salt.
- 3/4 cup flour
- 3/4 cup oats
- 1/2 cup brown sugar, unpacked
- 1/2 cup white sugar
- 100 g. butter (1/2 cup)
- 1 tsp. cinnamon
- 3 pounds apples (6 med. Granny Smith)
- 1/3 cup orange juice mixed with
- 1/2 tsp. vanilla extract
Butter a 9×9 inch casserole dish and preheat the oven to 350º.
In a large bowl, mix together the flour, oats, sugars and cinnamon, then cut in the butter. Mix well and then separate half of the mixture into another small bowl. Peel, core and cut the apples into 1/4 in. thick slices. Mix apple slices into the large bowl of oat, flour mixture. Toss well. Transfer to the casserole dish, pour the orange juice and vanilla over the apples and pat the mixture down. Then top with the remaining oat, flour mixture. Bake for 45 min.
Serve with vanilla ice cream.
